This pasta bake, with ricotta filled conchiglioni (giant pasta shells) in spicy, tangy tomato sauce, is one of my favourite pasta recipes. It is simple to make, yet feels luxurious and special thanks to the creamy cheesy filling in each shell, which goes oh-so well with the spicy tomato sauce. Just a little bit of… Continue reading Baked ricotta stuffed conchiglioni recipe
Butter Chicken (or Makhani) is one of the more popular Indian style dishes on curry takeaway menus, but it’s rare to see a veggie version of this classic. ‘Butter Veg’ doesn’t have quite the same ring to it, but grilled crispy vegetable skewers dunked in a creamy butter style sauce definitely appeals to me. This… Continue reading Tandoori vegetable skewers with chickpea Makhani sauce recipe
What says home cooked comfort food quite like a freshly baked cheesy lasagne straight from the oven? This recipe is like a hug on a plate, with rich hearty ragù sauce layered with creamy, indulgent béchamel sauce and soft pasta sheets, all topped off with a generous covering of gooey melted cheese. If your mouth… Continue reading Comforting homemade lasagne recipe
This recipe was actually created as a result of putting together 2 others that I love, and in all honesty, was a bit of an experiment. The only problem was that when… Continue reading Spiced slow-cooked beef with a saffron rice crust recipe
Spicy chilli con carne has always been one of my favourite dinners, and this recipe is a fail safe way to cheer me up and fill me up. Anyone who knows me well will know that I love pie. I love pie with creamy mashed potato, doused in thick gravy until the mash begins to dissolve in the liquid and the pie crust starts to soften (to my mum’s sheer horror). I love cutting into fresh, crisp pastry, homemade when I have the… Continue reading 3 things that make a perfect pie & my 3 favourite pie recipes
This is an indulgent and warming recipe to treat yourself to on cold nights. For me, chicken and mushroom pie is ultimate comfort food, and is full of nostalgia. As a child, my favourite dinners were always the kind which came with gravy and veg. In fact at one stage, I wouldn’t even entertain the… Continue reading Chicken and Mushroom Pie Recipe

As it’s Chris’ birthday in December, and he’s very difficult to buy for, I had to get creative to organise presents for 2 occasions in such close proximity! To make matters worse, it was his 30th as well, so I wanted to do something special. Cue a meal and night away to celebrate, and escape the dramas of Christmas, and our recent engagement. (It was all go in December! – hence this post is only just going out…) Widbrook Grange hotel was the perfect place to relax and enjoy the occasion.
